Cottage cheese is a creamy and mild curdled milk with a soupy and heterogeneous texture. It is rich in proteins and calcium with a lower fat profile. Because of this and its casein content, it is more popular among athletes and those who watch their calories and carbs. A cup of cottage cheese provides about 22-25g of proteins. Cottage cheese can be had with fruits, veggies, as such with a drizzle of honey, and could be used as a dip too. Having it in the above said forms as a snack or appetizer are our favorite ways. This easy ice cream needs the following three ingredients:
Cottage cheese - Use full fat cottage cheese for creamier texture and flavor.
Mango - Any variety of ripe mangoes can be used. The color and flavor of the ice cream depends on the type of mangoes used. Make sure the mangoes are not fibrous variety and this may give chunks of fiber in the frozen dessert too.
Sweetener - Any sweetener like sugar, maple syrup, or honey can be used.
Do you need an ice cream churner /ice cream maker?
Not at all! This ice cream is easy to make and involves no churning just like this No Churn OPeach Ice cream. A blender or food processor is all you need to make this protein rich ice cream. Just add everything to your food processor and pulse until you get a creamy texture. Transfer it to a freezer safe container or a loaf pan and freeze for about 4 hours. Simple! You may leave it out for a couple of minutes before scooping, this helps in easy scooping.
What variations can be made?
Variations are always possible with flavorings. Swap with any fruit of your choice to make your new favorite protein rich ice cream. Bananas are a great addition to reduce the sweetener. It also adds to the creamy texture. Keep in mind that it will have a tinge of dominating flavor and add accordingly. Frozen fruits can also be used. Add a couple of tablespoons of crushed graham crackers to give the cheesecake flavor. Add a dash of vanilla or a pinch of cardamom, if preferred.
