Oats is another main ingredient of the cookie. Oats is heart healthy grain which is a great option for daily intake. In fact, I love to start my morning with a bowl of oastmeal. Sometimes, you need on the go breakfast and this cookie will be an amazing breakfast cookie loaded with oats, nuts, and dates. Make the cookie in bigger size for sizeable breakfast cookie. If made in smaller size, you may need a few of these!
Whether you make for every day breakfast, snack, or for special event entertaining, this cookie sure is a winner! Easy to make and healthy too. There is no need for butter as the nuts added are a good source of essential fats. They also give proteins and micronutrients too.
Like I said before, to make this cookie, just process everything in your blender, shape it as per preference, and bake. These cookies retain the same shape and do not spread. So easy to make more number in the same tray! I made medium soft cookie, if you prefer a crispier one, bake for a couple more minutes. We love a soft and chewy one! A little coconut oil is need to apply on your palms if you want to shape them in creative ways.

Makes 15
Rolled oats - 1 cup
Dates - 8 to 10
Almonds - 1/2 cup
Cashews - 1/4 cup
Maple syrup - 3 tbsp
Coconut oil - a little.
Method
Pulse the nuts in food processor to a coarse texture.
Add the oats, dates, and ,aple syrup. Run the food processor a couple of times to a uniform coarse texture. Transfer to a bowl.
Scoop tablespoon sized quantity of the mixture to a baking sheet. Apply a little coconut oil and shape into heart. Repeat with the rest.
Bake for 13-14 minutes at 350 degrees F. Cool completely. Store in airtight container for a week to 10 days.
