Carrot Cinnamon Rolls

These are the best cinnamon rolls and best breakfast of the season! Fluffy, soft, delicious rolls are not just ordinary rolls, these vibrant rolls loaded with carrots are topped with a silky and dreamy cream cheese icing. These rolls scream Spring! Sounds perfect and delicious!!



I received samples from Melissa's Produce, Anolon, Taylor and Colledge, and Selefina Spices to aid the process of recipe development. Best food starts with the best ingredients and these products are simply the best!

Next, Taylor and Colledge extract pastes give the perfect flavor in baked goods and it is always my go to  choice to use for any recipe. Check here for delicious recipes using almond extract paste, vanilla extract paste, Lemon extract paste, and Lavender extract paste. If you haven’t tried these, do try now and do not miss on the flavors.


Anolon pans are the best! They transfer heat uniformly and quickly resulting in even baking results every time. Whether you bake cookies, breads, or cake, it is a must to use Anolon pans for best results.


Finally, Selefina spices cinnamon powder. This is the best I have used so far! The aroma, flavor, color of the cinnamon powder ranks high. The best quality ever. What makes these cinnamon rolls the best?


Basically, everything! These delicious rolls are soft, fluffy, gooey, moist, and vibrant in color. The silky cream cheese icing and the rolls are to die for! These rolls will make you remember having carrot cake! Yes! 



The following ingredients are required to make these soft rolls:


All purpose flour - This gives the soft results. Whole wheat flour may be replaced, but might give a little denser rolls. Replacing it with bread flour will result in a chewy texture rather than a soft and pillowy texture. 


Salt - flavor enhancer


Carrot juice - a freshly pressed carrot juice is amazing to use in this recipe. Melissa's Produce carrots are used. If you do not have access to these, the carrots available in your local region can be used


Cinnamon - This gives the characteristic flavor to these rolls. Selefina Spices. cinnamon is the best


Walnuts - optional. If nuts are preferred, sprinkle along with cinnamon powder while making the rolls.


Bread machine yeast - Instant yeast is used in this recipe. If using active dry yeast, activate before adding to the dry ingredients.


Butter - Gives soft rolls. It is also used for the cinnamon sugar filling and for the icing.


Sugar - sweetens the dough.


Brown sugar - sweetens the cinnamon filling.


Cream cheese - used for the luscious icing on top of the rolls.


Powdered sugar - to sweeten the icing.


Taylor and Colledge vanilla extract paste - a little of this vanilla extract paste extends a beautiful flavor to the icing




Now that you have gathered the necessary ingredients, let’s move on to making it. Do you think it is hard? Not at all! This recipe is easy. Shaping the dough, rolling the dough are easy and you’ll get the hang of it as you do. It’s super easy. Here is a tip to cut the rolls into equal portions. Never use a knife. It may seem easy but will result in squishing the layers. The best and easiest way is to use a piece of twine thread. Just let it under the dough log, cross it over on the top, quickly and gently slicing the dough at desired lengths. Trust me, it is easier than you think. 


Is this a bread machine recipe?


A bread machine is used for making the dough and proving it. Then it is rollers, filled, sliced, proved again and baked. The first step can also be made manually. I prefer to use a bread machine as it saves time and energy, especially elbow grease. But if you like kneading, by all means go for it. That’s therapeutic to me. Also, it is satisfying to watch the dough made in the machine. Like a kid, right? 



How many rolls does this recipe make?


This recipe makes 12 regular sized cinnamon rolls. These are perfect for breakfast! Ahem….. if anything is left after you bake them. These are so good that your family might end up finishing them as they are iced. It happens here, every time. I have to impose a curfew to save these so I can take pictures. Phew! That’s the life of a blogger! Anyways, these are heavenly in flavors that your family will love. I recommend making another batch too.


Storing these rolls.....


These soft and delicious rolls would be gone in no time. If you have leftovers, since it has cream cheese icing, it is better to store in the refrigerator. Pop them for 10-12 second in your microwave and they are good to serve warm. They can be stored for 3-5 days in the refrigerator.

Though I have listed the reasons to make these rolls, one major reason is the main ingredient carrot. This root vegetable is very much essential to us as it is rich in beta carotene.  This versatile veggie is great from appetizer to dessert. Try these delicious carrot recipe and you'd include in your menu always.

Ingredients
Makes 12 rolls

All purpose flour - 2 and 3/4 cups plus 1 tbsp
Butter - 6 tbsp, room temperature
Milk - 1/2 cup
Carrot juice - 1/2 cup
Instant yeast - 2 an 1/4 tsp
Salt - 1/2 tsp
Sugar - 1/4 cup


Filling

Brown sugar - 1/3 cup
Selefina Spices. Cinnamon - 2 tsp
Butter - 1 tbsp, room temperature
Walnuts - 1/2 cup (optional)


For the Cream Cheese Icing

Cream cheese - 4 tbsp
Butter - 1.5 tbsp, room temperature
Powdered sugar - 1/2 cup
Taylor & Colledge Vanilla extract  1/2 tsp



Method


Add the milk, butter, sugar, salt, and carrot juice to the breach machine compartment. Next, add the flour and instant yeast. Set the machine to run "Dough Cycle". 


In the meantime, mix the cinnamon, brown sugar, and butter to a crumbly mixture. Set aside.


The dough would have doubled in an hour.


Transfer to flour dusted surface. Punch and knead the dough to a smooth ball.


Roll it into 10X15-in rectangle.



Spread the cinnamon sugar mixture on the dough leaving half to one inch on the longer edge. Sprinkle some walnuts, if preferred.


Begin to roll from one edge of the longer side. Gently roll into a log, not too tight, not too loose.


Slice the log into 12 equal portions with a twine thread. Place the rolls on a buttered and flour dusted 9X9 Anolon baking pan.



Cover and set aside for 30-40 minutes to double in size.

Preheat the oven to 375 degrees F.


Bake for 16-17 at 375 degrees F. Remove from the oven and cool.


When the rolls bake, beat the butter, cream cheese, powdered sugar, and Taylor & Colledge vanilla extract paste top a smooth and silky consistency.


Spread this generously on the rolls. Serve warm.
