Vegan Protein PBJ Baked Oats


This is a comforting, healthy, and vegan breakfast that would be loved by everyone. In addition to the flavors, this breakfast is loaded with proteins, about 25.5g of protein.


Why this baked PBJ oats?


Who doesn’t love peanut butter and jelly? PB&J is the most comforting combination and the classic sandwich could be the best quick meal for me, or for anyone. Oats are heart healthy grain and PBJ flavored oats is a healthier breakfast than the regular sandwich. The flavors of this baked oats would convince anyone to have oats for breakfast and kids would love this for a fuss free morning meal. This nutrition packed and sugar free recipe would give the satisfaction to parents that you provided your family with the best wholesome breakfast for the day. 



What are the ingredients required for making this baked oats?



Rolled Oats - I prefer rolled oats than instant oats for the texture.


Banana - Sweetens the oats naturally while providing potassium and fiber. It also acts as the egg replacer.


Oil - A tiny bit adds to the flavor. Peanut or coconut oil would enhance the flavor, but any oil of your choice can be used.


Flaxseed powder - Used as an egg substitute, rich in omega fatty acids, and proteins


Plant based protein powder - I often use plant based protein powder in many smoothies and this oats also uses the same. This gives the protein boost.


Baking powder - the leavening agent


Salt - adds flavor 


Maple syrup - optional, for extra sweetness 


Vanilla - enhances flavor 


Peanut butter - smooth peanut butter is used in this recipe. 


Jelly - fruit pectin based grape jelly is used in this recipe. Your favorite jelly can be used.


Oat Milk - this recipe uses oat milk and it is the liquid that cooks the oats. Any plant based milk or regular milk based on your food preference can be used.



What is the protein content in this oats?


A scoop or quarter cup of the plant based protein powder that  I use gives 12.5g protein. The oat milk and the rolled oats add 5.5g of protein. Peanut butter and flaxseed give 7g and 0.5 g of protein respectively.. In total, this recipe gives about 25.5g of protein. This is packed with amazing nutrition!!! 



How many servings does this make?


This makes a single serving. But if you are giving this to young kids, it could make two servings depending on their age. But, they might surprise you by emptying it completely!!! 


Is this similar to the trending blended oats?


Sort of. Blended version also works great in this recipe. I like a bit of texture and chose to have it baked without blending.


Troubleshootings.......

The liquid content in making the eggless baked oats is very important. The batter has to be thick!! Else it would result in a gooey mess. Yes, too much banana or milk doesn't help in making the trending baked oats in egg-free version. After multiple trials of liquid ratios, this is the one that gives the perfect baked oats.

Ingredients
Serving 1

Rolled oats - 1/2 cup
Oat milk - 1/4 cup
Peanut butter - 2 tbsp
Jelly - 1 tbsp
Baking powder - 1/2 tsp
Baking soda - 1/8 tsp
Protein powder - 1/4 cup
Flaxseed powder - 1 tsp
Oil - 1/2 tsp
Vanilla - 1/4 tsp
Banana - 1/4
Salt - a pinch


Method

Preheat the oven to 350 degrees F.

Mash the banana and add the rest of the ingredients.


Mix everything. It should be thick.


Transfer this to a greased 8-oz ramekin and swirl on the top with a tablespoon of jelly.


Bake at 350 degrees F for 25 - 26 min. Cool for a few minutes after removing from the oven. Serve warm.
