Mexican Molletes (pronounced miss-yeh-tes) are open faced sandwiches made with just three ingredients - bread, refried beans, and cheese. They are generally eaten for breakfast, lunch, or dinner. This appetizer is based on this quick comfort food, and any comfort food flavors will always be loved by everyone.
Bread - Rolls like Bolilo or Telera are used traditionally. To make them bite sized, I have used slices of fresh baguettes to make the comfort food as bite sized appetizers. Slice a fresh baguette into about 25-26 slices of half inch thickness.
Butter - a little butter on the bread adds to the flavor as well as the crunch.
Refried Beans - this recipe uses homemade refried beans using pinto beans. In this way, it is possible to customize according to your spicy heat preference. Store bought refried beans can also be used. Refried beans with black beans can also be used for flavor variation.
Toppings - a fresh pico de Gallo, pieces of avocado, and jalapeños are great to ping choices to jazz up Molletes and bite sized Molletes. Though they can be served as such, serving with toppings make it extra special. Plus, it allows the guests to add toppings according to their choice.
These Molletes bites are perfect to serve for any occasion. These can be fixed in a jiffy and need only a few minutes of active cooking time. A warm cheesy bite is the best comforting comforting food and these tasty bites would please any crowd. Ingredients
Baguette - 1, slices to ½-in, thick slices
Refried beans - 1 to 1.5 cups
Cheese - 1.5 to 2 cups, shredded
Butter - 2 tbsp, room temperature
Fresh pico de Gallo
Sliced jalapeños
Avocado cubes
Spread a little butter on the bread slices. Broil for two minutes.
Remove from the oven, spread a little refried beans.
Top with some cheese.
Broil for 2-3 minutes until the cheese melts.
Remove from the oven. Transfer to a serving platter, serve with toppings on the side.
