Cream Cheese Swirl Ginger Bundt Cake


If you are looking for the best flavored cake for the season, well you are on the right page. This cream cheese swirl ginger bundt is easy and delicious packed with warm spices. The additional swirl of molasses cream cheese swirl adds to the top notch flavors that you would be addicted to.



Who doesn’t love cake? Especially, when it is not overloaded with cream. A simple and delicious cake that warms you up right from the inside is the best for this cold season, and gingerbread flavors are the perfect ones to bake. A simple cake with a little bit of ginger and cinnamon with a pinch of nutmeg and cloves will make everything better even on a bad day. 



Now, to make it the best one, add a swirl of cream cheese. Well, not just cream cheese, but molasses cream cheese. Molasses perfectly pairs with gingerbread flavors and it gives you an ultimate and out of the world flavors like in this Gingerbread Melonpan. The molasses flavored cream swirl inside the cake gives a heavenly bite and makes the cake slice look very special when you serve. 



This bundt cake is the same as these mini gingerbread cupcakes, only that the ginger flavor is bumped up and it has the tasty molasses cream cheese swirl inside. This is an eggless cake.This is a delicious and comforting cake that can’t be ignored.

Ingredients

All purpose flour - 1.5 cups
Salt -1/4 tsp
Ginger powder - 1.5 tsp
Cinnamon - 1 tsp
Nutmeg - 1/8 tsp
Clove - 1/8 tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Flaxseedpowder - 2 tbsp
Milk - 1/2 cup
Molasses - 1/2 cup
Butter - 1/2 cup
Vanilla - 1 tsp
Brown sugar - 1/2 cup
Powdered sugar - 1 tbsp, for decoration

For Molasses Cream Cheese filling

Cream cheese - 6 tbsp
Molasses - 3 tbsp
Vanilla - 1/2 tsp
Corn starch - 1 tsp

Method

Add flaxseed powder to milk, mix, and set aside for 10 minutes to gel.

Beat the cream cheese, molasses, vanilla, and corn starch to a fluffy consistency. Set aside.


Preheat the oven to 350 degrees F. 
To a bowl add the flour, spices, salt, baking powder, baking soda, and mix thoroughly.


Beat the butter, brown sugar, and molasses until fluffy. Add the flaxseed mixture and vanilla and beat. The mixture will look curdled but it will be ok.


Add the dry ingredients in three to four batches and beat thoroughly, scrapping the sides.


To a greased and flour dusted bundt pan, add one-third of the cake batter. Spoon half of the cream cheese mixture. Add another thirds of the batter and spoon the remaining cream cheese and swirl it. Top with remaining cake batter. 


Tap a couple of times to release any trapped air. Bake at 350 degrees F for 43-44 min, or until inserted skewer comes out clean.


Cool completely, Invert and transfer to a serving plate. Sprinkle with powdered sugar. Serve.
