Gingerdoodles


These are the tastiest, spiced, buttery cookies perfect for the Holidays! As the name suggests these cookies are the perfect fusion of gingerbread and snickerdoodle cookies. 

These are totally fun cookies with lovely flavors that everyone would love. These are amazing to bake and give to friends and families as great holiday edible gifts. These are a great addition to cookie trays too.


Gingerdoodles are part gingerbread and part snickerdoodle cookies. The flavors in these cookies are full of warmth! It is the right choice for this season. The ginger, cinnamon, nutmeg, and cloves are the warm spices that give tons of flavors to the cookie and the molasses adds to the flavor depth. This gives the touch of gingerbread flavors. The molasses, ginger, and the spices are a heavenly combo that also warms you up whether it is these breakfasts Vegan Coconut Gingerbread Muffins, Whole Wheat Gingerbread Pancake Puffs, Slow Cooker Gingerbread Oats, or this delicious and ultimate dessert of the season, Eggless Gingerbread Mini Cupcakes!

These cookies also have cream of tartar and are rolled in cinnamon sugar. This is the snickerdoodle part of these cookies. You get both the parts of the flavors in one cookie. There is cinnamon in the cookie dough and is rolled in cinnamon sugar, yet they have the perfect amount of cinnamon and are never overwhelming. In fact, the flavors will prompt you to gobble at least a few of these in a row. It is a better idea to make multiple batches! These cookies spread a little and it is great idea not to over crowd the baking sheet.


These cookies are eggless but you wouldn’t miss any flavor or texture in these. They are in fact amazing! Just try these and you would be hooked on to it. Ingredients 
Makes about 40

All purpose flour - 2 cups
Butter - 1/2 cup
Dark brown sugar - 1/2 cup
Molasses - 1/4 cup
Sugar - 1/4 cup
Flaxseed powder- 1 tbsp
Milk - 1/4 cup
Baking soda -1.5 tsp
Vanilla - 1 tbsp
Ginger powder - 2 tsp
Cream of tartar - 1 tsp
Cinnamon - 1.5 tsp
Nutmeg - 1/8tsp
Cloves - 1/8 tsp
Salt - 1/2 tsp

For Cinnamon Sugar

Cinnamon - 2 tsp
Sugar - 1/2 cup


Method

Add the flour, cream of tartar, baking soda, salt, cinnamon, ginger powder, nutmeg, cloves to a bowl, and mix. Set aside. Add milk to flaxseed powder and set aside for 10 minutes to gel. Mix the cinnamon and sugar in a bowl and set aside. Preheat the oven to 350 degrees F.

To another bowl, add the butter, molasses, brown sugar, vanilla, flaxed egg, and granulated sugar. Beat until light and fluffy.


Add the flour in four to five batches and beat to make a cookie dough.


With a cookie scoop, scoop the cookie dough and roll in it on cinnamon sugar.


Place on a lined baking sheet. Repeat with the remaining cookie dough. Place about 12 cookies in a standard cookie sheet. Use additional cookie sheets for baking.


Bake for 7-8 minutes. For a crunchy one, bake for a minute longer. Cool on the tray for 5 minutes, transfer to a cooling rack and cool completely.


Store in airtight container until use.
