Lemon and lavender is a wonderful combination! DIVINE pairing! I have used lemon and lavender extract pastes from Taylor and Colledge in the cake. These two pastes are a big help while baking eggless cakes. The wet to dry ingredient ratio is very important as the eggs that give structure are not used here. The pastes add beautiful and exact flavors and would recommend these for delicious lemon lavender cakes. I have also used Melissa's Meyer lemon zest for bursting flavors! The zing factor! YUM!

Ingredients
Makes 12 cupcakes
All-purpose flour - 1 and 1/3 cup plus 1 tbsp
Corn starch - 1 tbsp
Baking powder - 1 tsp
Baking soda -1/2 tsp
T&C Lemon extract Paste - 1 tsp
T & C Lavender paste - 1/2 tsp
Salt - 1/4 tsp
Greek yogurt - 3/4 cup
Aquafaba - 2.5 tbsp
Butter - 4 tbsp
Dixie Crystals Sugar - 1 cup
Meyer lemon zest- 1 tsp
Cream Cheese Frosting
Butter - 7 tbsp
Cream cheese - 7-0z
Honey - 3 tbsp
Lemon zest - 1 tsp
Powdered sugar - 4 and 1/2 cups
Method
Preheat the oven to 350 degrees F.
Add the flour, cornstarch, salt, baking soda, and baking powder to a bowl. Mix and set aside.
Add butter, sugar, Greek yogurt, and aquafaba to another bowl. Beat until light and fluffy.
Add the lemon extract paste and lavender extract paste. Fold in.
Add the dry ingredients and beat well. Fold in the lemon zest.
Pour about two thirds the cavity of a lined cup cake tray.
Bake for 16 minutes. Cool completely. In the meantime, add all the ingredients for frosting to bowl and beat until fluffy and light.
Transfer the frosting to a piping bag and pipe swirls on the cupcake. Add tulip sprinkles on top! Serve.
