Oatmeal Carrot Halwa Ice Cream Sandwich #SpringSweetsWeek


These oatmeal carrot halwa ice-cream sandwich are the ultimate dessert you’d want to dig in! Oatmeal carrot cookies filled with carrot halwa ice cream - double the carrots, double the deliciousness! Doesn’t it sound awesome?

Spring is the best season for carrots. They have the peak flavor. I received carrots from Melissa’s Produce snd decided to make these cookies and in turn make the ice cream sandwiches as these are double carrot goodies that are our favorite! With Dixie Crystals pure sugar, it is easy to whip up these delicious dessert cookie sandwiches that everyone would love.

When I saw the carrot shaped sprinkles in Sweets & Treats, I fell in love with them. These are super cool and yummy treats which would urge every bit if the kid in you to devour this dessert! Plus, these sprinkles are perfect for the carrot themed ice cream sandwich!

Anolon baking sheet is one of the best baking sheets I have used. It is a very sturdy one too! The heat is conducted evenly and the bakes quicker. So, you'll get amazing baking results a bit quicker and highly recommend this pan.


We love oatmeal and carrots and this dessert is always super hit in our home. Besides, the carrot oatmeal cookies are a healthy breakfast option. Make it into a bigger cookie if you prefer and it is a great option for on the go breakfast! These cookies stay fresh longer too!


It is important to cool the cookies completely before making these into sandwiches with ice-cream filling. When making the sandwiches it is a great idea to have everything ready set so that it is easier to wrap and store them. Have the Saran Wrap pre-cut to wrap the cookies, the ice cream scoop, and the S&T carrot sprinkles. In this way, it is easier to scoop ice-cream, fix the sandwiches, roll in the sprinkles, and wrap them tightly to be frozen again! This would avoid messy sandwiches and the mess in the counter. Lesser cleaning means more fun.



I love using carrots in sweet as well as savory recipes. I  always love a bowl of this simple and delicious Carrot and Ginger Soup! That's my favorite for this season. Carrot fries are a healthy alternative to regular potato fries and we love this fresh carrot slaw which I make often following my mom’s recipe for a good number of years. Carrot Halwa and Carrot Halwa Icecream are house favorites! This oatmeal carrot halwa ice-cream sandwich too!

To make these sandwiches all you need is the regular ingredients for an oatmeal cookie, carrots, nuts, and carrot halwa ice-cream. The cookies and the ice-cream are eggless. Flour, rolled oats, brown sugar, granulated sugar, walnuts, raisins, flaxed egg, butter, vanilla, and of course shredded carrots are needed for the cookies. The measurement for the sandwiches requires about one and a half recipes of carrot halwa. 


I love the combination of cinnamon in oatmeal cookies. So for the lovely cinnamon flavor to be a star, I have used cinnamon in the Carrot Halwa Icecream too. Cardamom also works! So based on your taste preference cardamom or cinnamon  can be used in the cookie and ice cream, or a combination of both! Explore!

Ingredients
Makes 20 sandwiches

Rolled oats - 1.5 cups
All-purpose flour - 1 cup
Salt - 1/4 tsp
Butter - 1/2 cup
Walnuts - 1/4 cup, chopped
Raisins - 1/4 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Vanilla - 1 tsp
Carrots - 1 cup, thin shreds
Cinnamon - 1/2 tsp
Flax seed powder - 1 tbsp
Milk - 1/4 cup
Brown sugar - 1/2 cup
Dixie Crystals sugar - 1/4 cup
Carrot halwa icecream - one and a half measurement recipe (recipe here)

Method

Add the milk to flaxseed powder and set aside to gel. Preheat the oven to 350 degrees.

Add the rolled oats, flour, salt, cinnamon, baking soda, baking powder, and mix.


Add butter, flaxed egg, brown sugar, granulated sugar, and vanilla. Beat well until fluffy.


Add the flour and in three batches and beat well until combined.


Fold in the shredded carrots, walnuts, and raisins.


Scoop with a cookie scooper, a tablespoon quantity, onto Anolon baking sheet. About 9 cookies per sheet.
Flatten the cookies as these won't spread much. 


Bake for about 7-8 minutes. When the edges begin to set, remove from the oven. Bake a minute longer if preferring crisp cookies. Cool for a couple of minutes and transfer to a cooling rack and cool completely.


Scoop two tablespoons of icecream on to the back of a cookie and close with another cookie. The backside of the cookies face the ice cream. Roll on the S&T carrot sprinkles or any other sprinkles you have on hand. Wrap tightly and freeze.


Freeze at least for four hours. Serve from freezer right away as needed.
