This curry is mild, delicious, and simple enough to prepare that it can be perfect for a busy weeknight or for a lazy weekend. The prep time is the chopping part alone and cooks very quickly in instant pot. Moreover, this curry is vegan and is perfect for your vegan guests for your Thanksgiving Party! I love this cumin flavored rice. They are great with flatbreads too.

Ingredients
Serves 6-8
Pumpkin - 2 cups, diced
Green gram - 1/2 cup
Tomatoes - 1 cup
Onion - 1/2 cup
Ginger - 1 tspGarlic - 1/2 tsp
Cumin - 1 tsp
Oil - 2 tsp
Coconut milk - 1/2 cup
Water - 2 cup
Salt - 1 and 1/4 tsp
Cayenne powder - 1/2 tsp
Turmeric - 1/4 tsp
Cilantro - 1 tbspGreen chili - 2, slitSesame seeds - 1 tbsp, toastedPeanuts - 1 tbsp
Pumpkin pie spice - 1 and 1/4 tsp
Method
Add oil to the instant pot in sauté mode. Add the cumin, onion, ginger and garlic, sauté for 2-3 minutes. Add the chopped tomatoes, green chili, and sauté for another 2 minutes. Add the green gram, water, salt, turmeric, cayenne, and pumpkin spice.

Method
Cook on high pressure for 5 minutes. In the meantime, grind sesame and peanut to a powder.
Release the pressure. Open the instant pot carefully. Add to the curry. Simmer for 2-3 min.
Serve with rice or flatbread.
