Eggless Coconut Lime Ginger Banana Bread

Have you ever wondered about a flavorful quick bread that would take you to the tropics? This loaf of coconut lime ginger banana bread will! This loaf  is the best  and easy breakfast or snack that has a perfect kick from lime with a nutty flavor from coconut and pistachios with a hint of ginger. 



This bread with tropical flavors has subtle notes of lime, coconut, and banana, but adds to the depth of flavors making it an amazing one to bake for your next breakfast or brunch. This is phenomenal!



I received samples from Melissa's Produce, Taylor and Colledge, and Selefina Spices to aid the process of recipe development. Best food starts with the best ingredients and these products are simply the best! 


First, Melissa's Produce Key Limes! These key limes have a tart flavor but not too acidic and have a good aroma. The juice and zest adds immense flavor.


Next, Taylor and Colledge extract pastes give the perfect flavor in baked goods and it is always my go to  choice to use for any recipe. Now this delicious loaf is not hard to make and you need the following ingredients to make:


All purpose flour - The base for the bread. Whole wheat can also be used.


Coconut cream - Gives perfect coconut flavor and aroma. Coconut milk can also be used.


Unsweetened coconut flakes - Gives the tropical flavor touch.


Pistachios - Nuts are nutritious adding proteins. Any nuts of your choice can be used.


Selefina Spices candied ginger - A bite of ginger here and there gives a twist in flavor.


Cardamom - A little goes a long way adding tons of flavor


Banana - Sweetens, binds te bread, adds nutrition and flavor


Salt - Enhances flavor


Baking powder - Leavening agent


Baking soda - Leavening agent


Flaxseed powder - Binder


Melissa’s key limes Key limes have a sharp and beautiful flavor. This is simply amazing. Zest and juice are used 


Taylor and Colledge Vanilla paste - Gives a beautiful vanilla flavor


Oil - Neutral flavor oil works best.


Powdered sugar - For the icing



How long can this bread be stored?


This bread is great at room temperature for 3-4 days. If the temperature is hot, store in the refrigerator for up to a week. Bring them to room temperature, or pop it in the microwave for a few seconds.


When can this be served?


This is great to serve for breakfast, and makes a good snack too. A slice of this packed as a surprise would make anyone head over heels. These can make a great and healthy dessert too.

Ingredients


All purpose flour - 2 cups
Salt - 1/4 tsp
Baking powder - 1 tsp plus 1/8 tsp
Baking soda - 3/4 tsp
Cardamom powder - 1/4 tsp
Flax seed powder - 2 tbsp
Water - 1/2 cup 
Coconut cream - 1/2 cup
Coconut oil - 1/3 cup
Banana - 1.5 cups, mashed
Taylor & Colledge Vanilla extract paste - 1 tsp
Melissa's Key Lime juice - 6 tsp
Lime zest - 1 tbsp
Coconut flakes - 1/2 cup
Sugar - 1 cup
Pistachio - 1/2 cup
Selefina Spices Candied Ginger - 1/4 cup, chopped
Ginger - 1/2 tsp, grated

Glaze

Powdered sugar - 1.5 cups
Lime juice - 1 tbsp
Lime zest - 1 tsp

Topping

Pistachio - 2 tbsp
Coconut flakes - 2 tbsp
Selefina Slices Candied Ginger - 1 tbsp, Chopped

Method

Soak flaxseed powder in 1/2 cup water to gel.


Add the flour, salt, baking powder, baking soda, and cardamom powder to a bowl. Mix and set aside.


Add the mashed bananas, Vanilla extract, sugar, flaxseed mixture, oil, coconut cream, grated ginger, and mix.


Add the lime juice and zest and mix.


Add this mix to the dry ingredients and quickly combine to a lump free batter.


Fold in the unsweetened coconut flakes, pistachios, and Selefina Slices candied ginger pieces.


Pour the batter onto a lined and sprayed 9X5-in loaf pan.


Bake at 350 degrees F for 58 minutes. Cover the loaf with foil for the last 10 minutes.


Coole completely.


Glaze: Add the lime juice, zest to powdered sugar and mix well to a smooth consistency.


Pour this onto he loaf. Keep a foil below, just in case, so that if anything drips, cleaning up is easier. Top with pistachios, unsweetened coconut flakes, and Selefina spices candied ginger. Set aside for a few minutes to set.


Slice and enjoy.
