Eggless Sesame Brioche Buns


These are soft and fluffy, cloud-like eggless brioche buns that are perfect to be served for breakfast as well as used as burger buns.


I received samples in the process of developing recipes and the views expressed in this post are my own. I received a baking sheet from Anolon and used to bake the brioche buns in this recipe just like in this Very Berry Turnovers. Anolon baking sheet is one of the best and would highly recommend it. It is sturdy with an amazing handle and spreads the heat uniformly.


Brioche is a traditional French bread/bun that is enriched with milk, butter, and eggs. This recipe is an eggless recipe. Aquafaba is used instead of eggs and that gives amazing results in eggless baking and this brioche is an amazing example for the same. Soft and cloud-like brioche! Jidase, Czech Easter bread and this Matcha and Strawberry Cream MelonPan came out perfectly using aquafaba, every time. Aquafaba can also be used to dip and fry like in this Lemon and Rice Cheese Bombs. and this Fried Spinach and Artichoke Cheese Balls. I use this regularly in my eggless cakes and check the blog for delicious eggless cakes.


These sesame crusted brioche buns that are cloud-like soft make my day! They are great as such with a cup of chai. Spread a little jam (and some cream cheese too) and make a comforting breakfast and it is guaranteed that the flavor will linger on your tongue for hours!


The brioche buns are not very hard to make. I recommend adding butter one tablespoon at a time, incorporating it, and then adding another. This gives a smooth finish lovely dough! Do not skip the kneading part. If kneading by hand, that's a great great workout for your arms. Stand mixer is a blessing. The dough can be made in a bread machine too.

These brioche buns can be used for any meal. This is great to have as such with a cup of tea or coffee. Dunk and piece of this in chai and enjoy a very tasty bite, and that's my way. This can be had with jam or Nutella or peanut butter too. They are great to make burgers and it takes the meal to the next level!

This recipe makes six regular sized brioche buns. These buns are amazing to be made to be served to guests too. Instead of making it into 6 portions, make it into 12 portions and it makes smaller brioche buns that are perfect to serve when feasting.

Ingredients
Makes 6

All purpose flour - 2 and 3/4 cups
Salt - 1 and 1/4 tsp
Non fat dry milk powder - 1/2 cup
Aquafaba - 10 tbsp
Butter - 10 tbsp
Water-  1/4 cup
Yeast - 3 tsp
Sugar - 2 tbsp
Sesame seeds- 2 to 3 tbsp
Aquafaba - 1 tbsp for brushing

Method

Activate the yeast in quarter cup warm water and half tablespoon sugar.


Add the flour, remaining sugar, salt, milk powder, aquafaba, and activated yeast to stand mixer and knead to a dough.



Add butter one table spoon at a time and knead to a smooth dough (knead for 10 minutes). Prove for 1.5 to 2 hours, until doubled.


Transfer the dough to a well dusted surface, punch and knead the dough. Divide into six equal portions.


Transfer the dough to a parchment lined pan, cover, and  prove for 1 hour. Preheat the oven to 375 degrees F. Then brush the buns with aquafaba and sprinkle sesame seeds generously.


Bake at 375 for 15 min. Remove from the oven, cool. Serve warm or at room temperature.
