Hatch Chili Potato Grilled Cheese


This is the perfect, drool worthy, comforting, cheesy, and spicy grilled cheese made with roasted hatch chili chile, boiled potatoes, and habanero-jalapeno cheddar!


Potatoes and cheese along with chile is a perfect and divine combo. Anytime or any meal will become  special with these combos. In fact, if you are a Baked Potato lover or Cheesy Potato Casserole lover, then this sandwich is the perfect one for you! The most simple and amazing combo in this grilled cheese! Comfort food raised to the ultimate comfort level!

I love spicy food and hatch chili. Yup! and these chilies jazz up any dish. I roast them in the season, to be used in many recipes, and will freeze them in required portions to add to any recipe. This Fire Roasted Hatch Chili and Corn Soup is a house favorite, lip-smacking delicious! It is a great idea to use this roasted chili and pineapple - a divine combination, to make this wonderful pizza loaded with flavors. Hatch chili adds an amazing kick to this grilled cheese too. If you cannot find this variety of chili, pickled jalapenos or any pepper of your choice can be used. Instead of roasting at home, the bottled ones available in stores can also be used.


This ultimate comfort food is easy to make and requires only a few ingredients. Nice and crusty loaf sliced (I have used sourdough bread as we love sourdough!), cooked potatoes, roasted and chopped hatch chile, and the spicy habanero jalapeno cheddar cheese. The spicy cheese gives the extra kick that is perfectly balanced with meaty potatoes and the butter. The butter smeared on the bread gives the perfect crispy and crunchy exterior! A lot of small things make this one the most loved one with bold flavors! YUM!


Any cheese can be used.  I would recommend cheddar or mozzarella, but play around with any cheese of your liking. This grilled cheese would remind you of the flavors of baked potato a little, and hence cheddar is amazing in this sandwich. If you can't handle the heat, skip the habanero cheese and use any cheese. I use a mixture of jack, pepper jack, cheddar, or habanero jack and sometimes with mozzarella in this sandwich and in every combination, this is a winner!

Ingredients
Makes 2 sandwiches


Bread slices - 4
Hatch chili - 2 tsp, roasted, and chopped
Habanero Jalapeno cheddar - 4 -5 slices
Butter - 1 tbsp
Potato - 1 medium Russet potato, boiled, peeled


Method

Spread a little butter on one side of each slice. To the plain side of a bread slice, smear a teaspoon of chopped hatch chili. Layer the slices of potatoes followed by cheese. Close the sandwich with unbuttered side of the other bread slice.


Heat a cast-iron pan on low-medium flame and cook the sandwich by flipping until it has a crispy exterior and gooey interior with completely melted cheese. This may take 3-4 minutes per side.


Serve immediately.
