Aji Criollo


This is a fresh, spicy, and tasty hot sauce from Ecuador. This vegan sauce requires a few ingredients and is ready in ten minutes. This will elevate the flavors of any food.


Sauces form an integral part of any meal! Every cuisine has its own variety of sauces and they just magically add flavors to the food on your plate. Some like to drizzle, some like to dunk, but they are the most delicious part of food!

This Ecuadorian hot sauce sounds very similar to the cilantro chutney or sauce that we make often. Only that the Ecuadorian version is made with their regional aji pepper or very spicy pepper. I couldn't find one and used serranos instead and the sauce tasted amazing.


This sauce requires very few items and mostly they are kitchen staples. Garlic, cilantro, spicy pepper, green onions, salt, water, and lime juice. That's all and in no time this sauce will be ready. Just blend everything together and this is a no-cook sauce!

This can be served with fried foods like samosa, aloo tikki, or any fritters, or just drizzled on any food for flavor enhancement. I served it with Tortillas de Verde aka green plantain patties.  The sauce stays fresh for 2-3 days in the refrigerator.


I referred to Laylita's recipe and made this. I have added the quantity of cilantro instead of a bunch in the original recipe. From time to time, or based on season, the cilantro bunch size may vary and the cup measurements make it easier to make a perfect sauce every time.

Similar to this hot sauce, try this Fresno Pepper Chutney for a spicy one to serve with idli/dosa or as a sandwich spread. This vegan Cashew, Cilantro, and Coconut sauce is a tasty one to serve with many fritters or drizzle on chili or tacos.

Ingredients

Spicy pepper - 3 to 4, serrano
Lime juice - 1.5 tbsp
Salt - 3/4 tsp
Water - 1/2 cup
Cilantro - 1 cup
Garlic - 3 -4 cloves
Green onion - 3 tbsp, white parts

Method

Add everything to the blender and blend till smooth.


Transfer to serving bowl, serve with any fritters.
