Jalapeno Cheddar Corn Bundt


This is the most delicious savory bundt cake that is comforting! A delicious jalapeno cheddar corn bundt with nacho cheese sauce! Sounds amazing right? It is! This has tons of cilantro in it along with jalapenos and cheddar cheese. So many reasons to love this one!


Corn bread is always comforting. To me, this baked bread is like baked upma. Cornmeal or semolina are used to make stovetop upma and I love to make their baked counterparts too. For example, this Cracked Wheat Upma is made on a stove and Vegan Pumpkin Coconut Cornbread is a baked version. They both are different in methods and flavors , but very delicious and comforting.


This cornbread will brighten up any occasion! The added cilantro makes a lot of difference. It is a versatile herb and adds tons of flavor to the food magically. I like to....it is like I love to . Maybe I have an affair with cilantro! I love this herb so much that every grocery trip will definitely have this one on the list. The aroma is very addictive and I love to add it to all my recipes. This delicious cornbread with lots of flavor components can be a budget friendly meal too! 


I have added the pickled jalapenos. Though they were labeled 'hot', they were not too spicy. The cornbread was delicious but not too spicy at all. Fresh jalapenos can be added and the quantity can be adjusted as per requirements. Cheddar is the perfect choice but play around with your choices. Jalapeno, cheddar, corn, and cilantro - all of these complement the flavors resulting in delicious food. Do not skimp on the cilantro and the aroma takes you over!

I wanted to make cilantro rich baked handvo or one similar to muthiyas/kothambir vadi flavors. But, my daughter convinced me to make this instead for the theme. We love this so much that we sometimes need a small excuse to make it often!

Like I said before, my love for this amazing herb is endless and love to make so many foods featuring cilantro as the star. Here is a quick list for a few.



Ingredients
Serves 4 to 6

Corn meal - 1/2 cup
All purpose flour - 1/2 cup
Oil - 1/4 cup
Salt - 3/4 tsp
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp
Sour cream - 1/4 cup
Greek yogurt - 3 tbsp
Aquafaba - 3 tbsp
Buttermilk - 1/3 cup
Cumin - 1/2 tsp
Turmeric - 1/8 tsp
Chili flakes - 1/2 tsp
Jalapeno - 1/4 cup, chopped
Cilantro -  1/2 cup, chopped
Cheddar cheese - 1/2 cup, shredded

For Cheese Sauce

Butter - 1 tbsp
All-purpose flour - 1tbsp
Milk - 1/2 cup
Cheddar cheese - 2/3 cup, shredded
Turmeric - a pinch
Jalapeno - 1/2 tsp
Cilantro - 1 tbsp, chopped


Method

Add the corn meal, all-purpose flour, salt, cumin, turmeric, chili flakes, baking powder, and baking soda to a bowl. Mix and set aside.


Add the wet ingredients to a bowl and whish to make it uniform. 


Add the dry ingredients and quickly whisk to get uniform and smooth consistency.


Fold in the jalapenos, cheddar cheese, and cilantro.


Pour into a prepared 7-in bundt pan.


Bake for 25 minutes. Remove from the oven and cool completely.


In the meantime, melt the butter and cook the flour in butter. Add the milk, whisk to make it lump free, and cook for 2-3 minutes.


Add the cheese, turmeric, and mix quickly. Switch off the flame, add jalapeno, and cilantro. 


Transfer the corn bundt to the serving platter.


Pour the prepared cheese.



Slice and serve.
