Vegan Apple Butter Blondies


These vegan blondies made with apple butter and loaded with caraeml bits and pecans are the ultimate in flavor! These have dried apple chips too in it making extra APPLE-ICIOUS! This is a must for blondie lover as well as apple lover. Serve with vanilla, caramel, or dulche de leche icecream to get the experience of a trip to paradise!


Apple butter is nothing but cooked apples pureed with some spices and becomes creamy like butter. This can be used as a spread on toast similar to jam. Apple butter adds amazing sweetness and texture to baked goods like apple sauce. The resulting bake is very flavorful!

Apples are one of the most common fruits loaded with nutrients! They are amazing to eat as such!Or in many recipes. This is a perfect and tasty combination of ingredients. While baking this may rise and look like a cake, but it will seettle down to a perfect blondie texture after baking. The chewy caramel along with chewy blondie with crunchy nut bites, this is exactly heaven!


Commonly available caramel bits may not be vegan as they contain butter and cream. Vegan or dairy free caramil bits or chips are also available. Try to use them.

This recipe used dried apple chips ans is totally optional. This addes extra apple flavor and also extra shelf life. When using fresh apples, the shelf life may be less whencompared to the dried ones. For longer life, store in fridge. Pop it in the oven, sand serve warm blondie. Serve warm blondie with a scoop of icecream for an amazing trip to paradise!

Ingredients
Makes 16 pieces

All purpose flour - 1.5 cups
Apple butter - 2/3 cups
Oil - 2/3 cups
Aquafaba - 6 tbsp
Baking powder - 1 tsp
Salt - 1/2 tsp
Cinnamon powder - 3/4 tsp
Brown sugar/coconut sugar - 3/4 cup
Vanilla - 1 tsp
Pecans - 1/3 cup, chopped
Caramel bits - 1/3 cup
Freeze dried apples - 1/3 cup


Method

Dust the caramel bits, nuts, and dried applepieces, set aside. Preheat the oven to 350 degrees F.

Add the flour, salt, baking powder, and cinnamon powder to a large bowl. Mix and set aside.


Add the oil, apple butter, aquafaba, vanilla, and brown sugar to a bowl amd mix for uniform consistency.


Pour the above mixture onto dry ingredients mixture and whisk to make a thick batter without any lumps.


Add the mut, apple, caramel mixture (reserving a couple of tablespoons) to the batter and fold.


Add this batter to greased and lined 8X8 pan. Add the reserved nuts-caramel mixture.


Bake for 35 minutes or until inserted toothpick comes out clean. Cool completely.


Cut into squares. Serve.
