Slow Cooker Sago Kheer


This is the ultimate way to make delicious sago or tapioca pearl kheer! This kheer is made in slow cooker and with this recipe, it is possible to entertain guests with the amazing kheer/pudding that is egg free! You'll hear the ooohs and ahhhs for a long time! With the touch of cardamom and saffron, this is an amazing kheer. You don't need a special occasion to enjoy this, any moment becomes special when you serve this kheer!


Kheer aka payasam is an integral part of all our festivals. Kheer traditionally can be made with rice, (other grain are used off late),  dals (with or without rice), vermicelli, almonds, or sago with milk and sweetened with sugar or jaggery. This is the recipe for slow cooked sago kheer. Sago or the white tapioca pearls are called as sabudana or javvarisi. 


Sago is roasted in ghee and cooked in water stirring often to get the perfect pearls. Sometimes, if you leave a second, it may burn quickly while roasting or may overcook and mushy. Simmering on low-medium heat with stirring often, ensures proper cooking. With the life of today...............hmph, you are always short on time! The slow cooker comes in handy now!

Slow cooker does all the work. Just add everything and set it on low. At the end do the finishing touches. Now that's a winner! It is now SO easy tomake this any quantities to entertain a big crowd. Just double or triple the recipe as needed.



For vegan option use oil instead of ghee. Milk is used and the pearls cook in milk-water mixture. I wouldn't suggest using coconut milk in a similar way of slow cooking, as it may curdle over prolonged cooking. Cook the pearls in water and at the end mix in coconut milk to make vegan version. In that case add sugar to sweeten.

Ingredients
Serves 4 to 6

Sago/tapioca pearls - 1/3 cup
Water - 2/3 cup
Milk - 1 cup
Condensed milk - 1/3 cup
Saffron - 1 pinch
Cardamom powder - 1 pinch
Pistachios - 2 tbsp, sliced or chopped
Ghee - 1 tsp, melted


Method

Add the melted ghee first to the slow cooker. Add the tapioca pearls followed by milk and water. Set it on low for 4 hours.


  After 3 hours and 45 minutes, stir. The sago pearls would have cooked beautifully.


Add the saffron, cardamom powder, and condensed milk. Stir and continue cooking for another 15 minutes.


Give a stir, transfer to serving bowl.


Garnish with pistachios. Serve hot, warm, or chilled.
