These are sweet, cute, and delicious red velvet cookie treats looking like little Santa hats, perfect for the season! This is an eggless recipe. Wait! There is a surprise inside this cookie! The cookies are super simple to make, with the only time between steps in the final stages. With a little planning this is easy to be made, this cookie will be a showstopper turning everyone's attention.

The surprise peppermint chocolate inside is the perfect flavor for the holidays! Don't you agree with me? Though any chocolate kisses can be used, this peppermint brings the comforting flavors of the holiday season. These are amazing ones to add to cookie trays and boards this season!
This recipe uses a little cocoa powder and lots of red color. Yes, lots and lots of red color to get the red color cookies. One may feel that the amount of food coloring added is more, but that needs to be added for a red color. Any amount lesser will produce pink colored cookies when flour mixture is added. Therefore recommend using no taste gel food colors.
Also, while working with the candy melts, there are a couple of points to be noted. They melt well and can be piped easily to make many wonderful decorations. But they need to cool a bit before piping to get a crisp and great piping. Else, it would flow dow. wait for 30-50 seconds, and the fill the decorating bag, and pipe. Second point is that after the red candy melts has cooled completely, start with the white one to get great results without mess.

Ingredients
Makes 20
All-purpose flour - 1 cup 2 tbsp
Butter - 6 tbsp
Vanilla - 1 tsp
Light brown sugar - 1/3 cup
Red coclor - 1 tsp
Milk - 3 tbsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Peppermint kisses - 20
Red color Candymelts - 1.5 cups
White candymelts - 1/3 cup
Method
Preheat the oven to 350 degrees F. In a bowl, add the flour, cocoa, salt, baking soda, and mix. Set aside
In another bowl, cream the butter and brown sugar with vanilla. Add the milk and red food coloring. Mix, it may look curdle but will rsolve in the next step.
Scoop with a cookie scooper for uniform sizing.
Place the cookie dough into greased mini muffin tin. Bake for 9-10 minutes.
While it is baking, unwrap 20 peppermint kisses chocolate and keep it ready.
As soon as it is removed from the oven, press the cookie with a small bottle or with the rolling pin handle to make an indent or cavity in the cookie. Place one peppermint kisses in each cavity while it is warm, so that it will bond with the cookie. Leave in the muffin tin to cool completely. This may take 20-30 minutes, as the kisses will firm up after melting a little.
Melt the red candy melts in 3o second interval. In about 1 minute and 20 seconds, the candymelts will be almost melted. Remove and mix with a spoon or mini fork to get even and smooth consistency. Let it cool for 30-50 seconds. Transfer this to a decorating bag fitted with nozzle 21. Squeeze and pipe the candymelts around the peppermint kisses ending at the top. Cool for 10 minutes to set.
Similarly, melt the white candy melts. When it is a bit cool, transfer to piping bag fitted with nozzle 2. Pipe around the edge of the cookie where the red color candymelt begins. Place a small dollop on top, thereby creating a Santa hat.Cool for 10 minutes to set completely.
Store in an airtight container untill ready to serve.
Monday Christmas Cookie Recipes
