If you are looking for perfect vegan noodles, you are in the right place. This recipe is vegan and it is totally comforting. Lo Mein noodles usually egg noodles, typically. The noodles can be substituted with pasta noodles like fettuccine or linguini. If you want a vegan version, you vegan pasta or make your own vegan pasta noodles. Alternatively, soba noodles can also be used. Asian groceries have these noodles. Or substitute with any noodles that you have on hand. Lo Mein noodles differ from Chow Mein noodles by being a dry noodle. Chow Mein noodles are smothered with sauce. Oyster sauce can be omitted for a vegetarian/vegan option. Just dig in for a comfort meal.
This noodle is not spicy. But very flavorful and comforting from the simple soy sauce, sesame oil, ginger, and garlic. If you want to add heat, use sliced peppers or hot sauce. Adding bok choy gives a vibrant color and boosts nutrition. Tofu can be added too. I served this with black pepper tofu.
When I was back from grocery shopping, my daughter pointed out the tag in bok choy. It was from Melissa's Produce. I was happy that kids have even noticed the brand when we were preparing to do the recipe. We had already participated in the #FamilyBakingChallenge last year by Melissa's Produce. We were planning to do the same now for the Lunar New Year. This is the first recipe in the #LYNCOOKOFF series from Melissa's Produce. Ingredients
Noodles - 1/2 lb
Sesame oil - 3 tbsp plus 1 tsp
Ginger - 1 tbsp
Garlic - 1 tsp
Corn flour - 1 tbsp mixed with 1 tbsp water
Water - 1/2 cup
Soy sauce - 1 tbsp
Bok choy - 1 bunch
Green onions - 2 or 3, chopped
Salt - 1/2 tsp
Water to cook noodles
Method
Chop and discard the bottom white portion of bok choy. Chop into 1-in pieces. Cook the noodles according to the packaged directions. Drain and set aside.
Mix the corn slurry, soy sauce, 1/2 cup water, 1 tsp sesame oil, mix and keep aside.
In a wok, heat the remaining oil and sauté the ginger and garlic. Then add the bok choy, salt, and noodles. Stir-fry on high heat. Add the corn flour-soy sauce mixture and stir fry for 2-3 minutes. Add the sliced green onions, mix well till combined.
Serve immediately.
