Soup is always comforting and everyone will have a favorite soup. I am sharing this soup for #SoupSaturdaySwappers. Karen is hosting this month. When she announced the theme as ‘favorite childhood soup’, I was thinking about mulligatawny soup or simple tomato soup. Those were the ones that I had during my childhood days and tomato soup ranked a teeny tiny bit more. My daughter convinced me to post this when I told her the theme. This is her all-time favorite soup. She loves it so much, that she would have it as often as she could. In fact, I made the tomato soup and clicked it too. Then, the thought of doing this as a good amount of spinach gets included in the diet. And this is a very simple and easy soup. So decided to post this one instead of simple tomato soup. This is one of the regular ones made often in our home. Also, the ratio of potato to spinach can be adjusted as per preference.

Ingredients
Makes 6 servings, roughly 1.5 cups each
Potatoes - 1.5 cups, cooked and mashed
Salt - 2 tsp
Water - 5 cups
Black pepper powder - 1/2 tsp
Thai green chili - 1, finely chopped
Green onion - 1/2 cup, chopped
Spinach - 10 cups, chopped and loosely packed
Oil - 1 tsp
Sour cream - a couple of tablespoons (optional)
Method
Heat oil in a saucepot. Add the green chilies and green onions, sauté for a minute. Add the spinach and sauté for 2 minutes.
Add in the mashed potato, water, salt, and pepper. Adjust the taste. Bring to a boil and simmer for 3-5 minutes.
Ladle into serving bowls, top with sour cream, and serve.
