Vegan Carrot Almond Rice Kheer


This vegan carrot almond rice kheer/pudding is a creamy, rich, tasty, and comforting ultimate dessert with the perfect amount of sweetness. This can be made with simple pantry ingredients and is fit to serve for special feasts.


Rice kheer/pudding  is the most simplistic and divine dessert that would melt anyone. A warm or cold bowl of rice kheer is just enough to wind yourself down and enjoy the perfect moment in your life. Growing up, I had a fair share of delicious rice puddings made with rice and milk or rice and coconut along with sugar or jaggery as sweetener. No occasion is complete without a kheer and rice is the one that is most frequently made with. Nut based kheer were also made but not that common. Birthdays and festivities call for rice pudding. I have to confess that this Rice and Coconut Kheer is my favorite one and I could have it everyday too. I used wait for festive occasions just for this kheer.


If you are thinking that vegan rice pudding is hard to make, it is time to rethink. It is as easy as the regular version. Like I said, try this Rice and Coconut Kheer/ Thengai Arisi Payasam, a simple vegan dessert you can indulge in forever. Cooking the rice in nut based milk makes it more nuttier and would give the same creamier effect as in regular puddings. Almond milk is a great choice to use.


This kheer is extra special to me as it screams Spring festivities. The rice, almond, and carrots in this kheer make it unique!  This kheer is an easy and ideal one to make for your family or for a gathering. This can be made ahead too. That’s a great plus when you have a huge crowd. Make this kheer for your Spring celebrations and while doing so make copies of the recipe, as you will be asked for it. This dessert will be loved by all guests, whether vegan or not. 

Only six to seven ingredients are required to make this delicious pudding.
Rice - This recipe uses basmati rice. Any rice variety can be used.
Almond milk - Unsweetened vanilla flavored almond milk is used here. The flavor profile may be different if substituted with a different plant based milk.
Sugar - Vegan friendly sugar is used in this recipe. Sugar of your preference may be used.
Carrots - Adds tons of color and flavor.
Almond flour - To make it extra creamy and enhances  almond flavors.
Almond extract paste - A little of this paste gives a definite almond profile to this pudding that keeps reverberating in your taste buds.
Cardamom - A tiny bit adds lovely aroma and flavor. Cinnamon can be substituted if preferred.
Oil (optional) - A little of neutral flavored oil works. This is optional. Rice can be dry roasted too.


The carrots of this season possess peak flavors and make a wonderful dessert, side, or breakfast. It is just carrot cake alone that can be made with carrots. Ingredients

Serves 8-10


Basmati rice - ⅓ cup

Water - ¾ cup

Oil - 1 tsp (optional)

Carrots - 3 cups

Almond milk - 4 cups, vanilla flavored, unsweetened

Sugar - ¾ cup

Almond flour - ¼ cup

Almond extract paste - ¼ tsp

Cardamom - 1, powdered


Topping


Sliced almonds


Method

Heat oil in a heavy bottomed pan and roast the washed rice for two minutes. The rice can be dry roasted too.

Add the water, and cook the rice. In a couple of minutes, the rice will absorb all the water.

Add the almond milk and carrots and cook for about 15 minutes until the rice turns creamy and the carrots are cooked.

Add the almond flour, sugar, and crushed cardamom. Continue to cook for another 4-5 minutes.

Add the almond extract paste, simmer for a minute. Remove from the flame.

Transfer to serving cups. Top with sliced almonds. Serve hot, warm, or chilled.
