Carrot Halwa Icecream #SpringSweetsWeek

Carrot halwa ice cream that is made with season's best carrots at the peak of their flavors, is the best icecream to have this spring! It is irresistible! This is easy to make and a crowd pleaser!


Carrot Halwa is a traditional dessert in which the carrots are cooked in ghee, milk may be added too and then garnished with dried fruits and nuts. Warm carrot halwa tastes amazing with a scoop of vanilla and that's one of our favorite desserts! So this ice cream combines both of our family favorites into one super favorite dessert!


I made this ice cream with Melissa's Produce carrots and Dixie Crystals sugar as a part of #Springsweetswekk and trust me, these are the best. Best ingredients and best flavors! I highly recommend using these ingredients for ultimate flavors but you can use what you have on hand and the recipe will work for it too!


We always add cardamom to carrot halwa. But we love cinnamon with carrot, walnuts, and raisins too. So I interchange cardamom and cinnamon often depending on the nut I am adding to it. Any nuts like cashew, almond, walnuts, or a mixture of these nuts can be used in halwa. When I use walnuts, I choose to add cinnamon. It is just preference so add according to your taste preference.


The carrot halwa should be cooled completely. chilled preferably before making ice cream. Also use a frozen bowl to churn ice cream. If all the ingredients are chilled well, the resulting ice cream will be creamy and will be churned quickly.


Carrots are the best veggie according to me and like a bunny, I love to snack on it constantly. Yes, I have carrots in constant supply. I love to add to many recipes like this pulao or vegetable curry or in soups too! Ingredients
Makes 32 0z

Carrot - 1 and 3/4 cups
Dixie sugar - 1/4 cup
Cinnamon - 1/8 tsp
Ghee - 2 tbsp
Milk - 1/3 cup
Walnutes - 2 tbsp
Raisins - 2 tbsp

For the icecream

Milk - 3/4 cup
Sugar 1.3 cup plus a tbsp
Heavy cream - 1.5 cups
Cinnamon - 1/8 tsp
Vanilla -1/2 tbsp

Method

Heat a tablespoon of ghee in a pan on a medium flame and add the carrots, and milk and cook. In about 5-6 minutes, the carrots would have cooked perfectly, and add sugar. Mix and add the cinnamon. Continue to cook for another 3-4 minutes for the carrot to absorb all the sugar and become halwa.


Heat another tablespoon of ghee and fry the walnuts followed by raisins. Add it to the halwa. Mix and set aside to cool. It can be refrigerated to chill.


When the halwa is completely cool or chill, start the icecream. Blend the sugar, milk, cinnamon, and vanilla. Then add the cream and combine well.


Add the cream mixture to icecream maker with pre frozen bowl. Churn for about 10-15 minutes. 


When the icecream is all ready, add the carrot halwa like how you'll add a mix-in at the last step of chrning. Churn for a couple of minutes.


Transfer to a freezer safe container.


Freeze for 4-6 hours.


When ready to serve, scoop into bowls, top with additional nuts and raisins if preferred and serve.
