Dried yellow peas are soaked and cooked with aromatic spices to make the curry style gravy for the chaat. So plan on time to allow 5-6 hours soaking time. If you are in short of time, use canned garbanzos in place of peas for a quick one. Works perfectly great! Just simmer for 15 minutes for the curry to be ready.
Ingredients

For the Patties
Big Mountain Foods Mighty Mushroom Bites - 6 to 8
Oil - 1 tbsp
For the ragada
Yellow peas - 1 cup
Water - 3cups, plus soaking
Salt - 1 and 1/4 tsp
Turmeric - 1/3 tsp
Chili powder - 1 tsp
Cumin powder - 1/2 tsp
Garam masala - 3/4 tsp
Coriander powder - 1/2 tsp
Onions - 3/4 cup, chopped
Tomatoes - 1.5 cup, chopped
Garlic - 1 tbsp, chopped
Ginger - 1 tbsp, chopped
For assembly
Onions -1/4 cup, finely chopped
Cilantro - 1 tbsp, chopped
Chaat masala
Fine sev
Green Mint-cilantro chutney
Sweet tamaring dates chutney
Heat oil in a pressure cooker. Add the cumin, ginger, and garlic. Saute for 40 seconds. Add the onions and cook for 3-4 minutes, until onions turn translucent. Puree the tomatoes and add to the pan. Cook for couple of minutes.
Add the soaked peas, followed by salt, turmeric, cayenne, cumin powder, coriander powder, and garam masala.Add water. Mix.
Pressure cook for three whistles. Alternatively, this can be cooked for 4 minutes (high pressure mode) in Instant Pot too. Once the pressure is released, gently mix the contents. Check and adjust the salt and cayenne as per requirements. Add a little water if needed to adjust consistency.
Heat a pan on medium flame. Drizzle oil and cook the patties 2-3 minutes each side flipping ones. Repeat with remaining patties if making in bateches.
To assemble: Add about half cup of the yellow peas to a cup. Add the toasted Mighty Mushroom Bites Patties. Sprinkle a little chaat masala, mint chutmey, sweet date tamarind chutney, chopped onions, sev, and cilantro. Serve immediately.
