Masala Mushroom Crumble Summer Rolls


This healthy summer rolls are absolutely delicious and tasty! These are made with Big Mountain Foods Lion's Mane Mushroom Crumble with a hint of garam masala and rolled in Vietnamese summer rolls style! This is one great snack or appetizer that one shouldn't miss.



 The chutney/dipping sauce for these summer rolls have a mixture of flavors from Indian and Vietnamese cuisine. Made with peanut butter, hoisin sauce, tamari sauce, and the well know Indian mint-cilantro chutney aka green chutney. This pairs amazingly well with the Lion's Mane Mushroom crumble masala summer rolls. The vegan sauces are available in stores. The green chutney could be made at home or store-bought. Mix and thin with water to make a quick and tasty dipping sauce.

These summer rolls are made with Lion's Mane Mushroom Crumble. This is made with three types of mushrooms  - Lion's mane, Portobello, and shiitake. They also have pea protein, yellow split lentils, and carrots. This gives a great nutrition when you whip up a quick meal or snack with this.


This filling is easy to prepare and needs only five minutes cooking time. With fresh veggies sliced thin, and some soaked bean threads, it is a breeze to make these. The Indian style small sized whole moong sprouts add a great crunch. These are amazing and fun that everyone will love when served in a party. Also, the rolling part is fun and guests would enjoy assembling the rolls by themselves! Also the fillings can be adjusted in type as well as quantity as per individual preference.

Ingredients
Makes - 6

Cook time - 4 minutes
Assembling - 10 minutes

Big Mountain Foods Lion's Mane Mushroom Crumble - 3/4 cup
Salt - 1/4 tsp
Turmeric - 1/8 tsp
Garam masala -1/2 tsp
Cilantro - 1 tbsp
Oil - 1 tbsp
Cumin - 1/2 tsp
Sesame seeds - 1/2 tsp

To assemble

Rice Paper - 6
Thinly sliced cabbage - 1/3 cup
Carrots - 1/3 cup, thinly sliced
Bell pepper - 1/3 cup, thinly sliced
Whole moong sprouts - 2 tbsp
Bean threads - 1/2 cup, soaked and cut
Cilantro - 1 tbsp

For the sauce

Peanut butter - 1 tbsp
Hoisin sauce - 1 tbsp
Tamari - 1 tbsp
Mint-cilantro chutney - 2 tbsp
Water - 1/4 cup

Method

Heat oil in a pan on medium flame. Add the cumin and sesame seeds, fry for 40 seconds. Add the Lion's Mane Mushroom Crumble, followed by salt, turmeric, and garam masala. Mix and saute for 3-4 minutes. Remove from flame, add cilantro and set aside to cool.


In the meantime, add the ingredients for sauce to a cup. Mix thoroughly and set aside.


Arrange the thigs needed for filling ready to quickle roll.


Just wet the rice paper. Remove to a dry plate. Add bean threads, a little cabbage, carrots, and bell pepper, followed by one and a half tablespoons of the masala mushroom. Add sporouts, cilantro. Roll similar to a burrito.


Repeat with the rest. Serve immediately with dipping sauce.
