Grilled cilantro lime is full of robust flavors and is a great addition to any outdoor or grill parties. This is even great for a weekend special meal too.
We often use paneer or tofu for grilling along with seasonal fresh veggies. The marinade adds tons of flavor and this is a very simple one to make. This is equally delicious as the popular tikka masala version. Simple and bold flavors of lemon and cilantro along with cumin, garlic, and the spicy kick from Serrano peppers makes a perfect marinade for creamy and meaty paneer.
This can be served as an appetizer or it can be included in numerous options, like in a salad or bowls. Paneer appetizers like the Italian Style Paneer Sticks are also delicious ones. To veganize, tofu can be used.

Ingredients
Paneer - 2.2 lb block
Marinade
Oil - 2 tbsp
Lime juice - 1/3 cup
Salt - 3/4 tsp
Cayenne - 1/2 tsp
Cilantro- 1/2 cup
Garlic - 2 tbsp chopped
Serrano pepper - 1 to 1.5 tsp, chopped
Cumin - 3/4 tsp
Method
Fir the marinade: Crush the cilantro, garlic, Serrano pepper, cumin and salt. To this add lemon juice and oil and whisk. Set aside.
Cut the paneer to half inch block pieces. Arrange in a bowl. Pour marinade and mix to distribute evenly.
Let in marinate for two to eight hours.
Grill till golden color and beautiful mark, flip and cook. Baste with marinade, if necessary. This can be done in panini press too. Set the panini press on high heat and grill for 3 minutes.
Serve hot with extra drizzle of marinade.
