This is one of the simple tomato and the tastiest tomato soups you have ever tasted. You'll fall in love with this amazing soup right away. In every bite, the rich taste of tomato can be savored. This is best to serve as such, or with a sandwich, or the with grilled cheese for the best meal.
Blanching the tomatoes helps in having a smooth soup. The recipe is very simple. The soup can be refrigerated

Ingredients
Serves 4 to 6
Tomatoes - 4 or 5
Water - 3.5 cups
Salt - 1 tsp
Peppercorns - 1/2 tsp
Onion - 4 tbsp, finely chopped
Garlic - 1, chopped
Butter/Ghee - 1 tsp
croutons (optional)
Method
Core the tomatoes and score at the bottom. Boil water and blanch the tomatoes.
When cool, peel, and chop the tomatoes. Reserve the water.
In a soup pot, heat butter, add the onion, garlic, and black peppercorns, sauté for 2-3 minutes. Add the chopped blanched tomatoes, salt, and cook for 3-5 minutes.
Blend with the reserved water and return to the pot. Simmer for 3-4 minutes.
Serve topped with/without croutons or along with a sandwich.
