Double Chocolate Whole Wheat Muffins


Double chocolate muffins are the ones that are requested often in my home. Instead of using all-purpose flour, I started making them using whole wheat flour. They are moist and very chocolatey! These are egg free and hence great for people with allergies. I have used milk chocolate chips. Any variety of chocolate morsels work for this recipe. Also, replace the milk with any plant based milk for a vegan version. It becomes a whole meal breakfast on the go. With milk it is a perfect and quick breakfast for kids. They are great for afterschool snack too! If you love chocolate, then I should warn you that it is hard to stop with one. This is my post for this month's #MuffinMonday hosted by Stacy.

Ingredients

Makes 12 muffins
Prep time - 10 minutes
Bake time - 17 minutes
Cooling time - 10 minutes

Whole wheat flour - 1.5 cups
Flaxseed powder - 1 tbsp
Milk - 1 and 1/4 cup
Brown sugar - 2/3 cup
Salt - 1/8 tsp
Baking powder -1 tsp
Baking soda - 1/2 tsp
Cocoa powder - 4 tbsp
Milk chocolate chip - 1/2 cup
Oil - 1/4 cup
Vanilla - 1 tsp

Method

Add 1/4 cup milk to flax seed powder and set aside for it to gel. Preheat the oven to 350degrees F. Line a muffin pan and set aside. Mix the dry ingredients except chocolate chips and keep aside. In another bowl mix the wet ingredients. Add the dry ingredients and mix. Fold in the chocolate chips. Fill the muffin pan and bake for 17 minutes. Cool for 10-15 minutes.
