Apple Pie Pancakes


These are delicious pancakes screaming apples and the flavors of fall. These vegan pancakes with apples, apple sauce, almond milk, maple syrup, and fall spices give the perfect comforting fall breakfast. 


Can you believe it is that time of the year when apple trees are completely loaded with bright red or green colored fruits ready to be picked? Yes, it is going to be autumn pretty soon and along with the season comes the seasonal produce and foods adding comfort. Apples and cinnamon give cozy comfort and none can deny that. A bowl of steel-cut oats with apples is my favorite breakfast. Apples get converted to snack slices to fruit custard to apple pies to pancakes, to apple Rasam, or ice creams, Blondies, cakes, or muffins, dessert pizza, or this caramel apple pie lassi

Apples make anything tasty! These pancakes will be gone faster than a pie! This is easy to make too! When you have guests, make sure to have this on the menu. The flavors of this will please anyone.  This cozy comfy breakfast is ideal for a weekday or a weekend brunch. These pancakes with tons of fall flavors makes the weekend brunch even cozier! Trust me on this! I would love to have these pancakes for dessert too!


What is special about these pancakes? The pancakes as well as the syrup! The pancake batter with applesauce, maple syrup, and cinnamon-nutmeg-clove will give the definition of Fall in every bite. The applesauce and aquafaba makes this the most fluffy pancakes ever! Grated apples can be used in the place of applesauce. Almond milk gives a nutty flavor to the pancakes. Any milk of choice can be used. Regular butter can be used instead of vegan butter, if you prefer a vegetarian version.


Next, the syrup is not just any syrup. This syrup has the apple pie filling, maple syrup, vanilla, and the comforting spices. Simmering the apples in the maple syrup-brown sugar-water mixture makes all the difference. Whether you dunk or drizzle this syrup, the chunks of apples along with the flavors of the syrup  and the pancakes, this breakfast is a ticket to cozy heaven!

Ingredients

For the Maple Apple Pie  Syrup

Apple  - 2 and 1/4 cups, finely chopped
Salt - 1 pinch
Maple syrup - 1/2 cup
Brown sugar - 1/2 cup
Vegan butter - 2 tbsp
Water - 1 and 1/2 cup
Cinnamon - 3/4 tsp
Nutmeg - a pinch
Cloves - a pinch
Vanilla -1 tsp


For the Pancakes

All-purpose flour - 1.5 cups
Salt - 1/8 tsp
Cinnamon - 1/2 tsp
Nutmeg - a pinch
Clove powder- a pinch
Apple sauce - 1/2 cup
Almond milk - 2/3 cup
Vegan butter - 2 tbsp, melted
Baking powder - 1.5 tsp
Aquafaba - 4 tbsp
Maple syrup - 1/4 cup
Vanilla - 1 tsp

Vegan butter - 2 tbsp (to make pancakes)


Method

Add the ingredients listed under 'For apple Pie Maple Syrup' to a sauce pot. Simmer for 8-10 min. Set aside to cool.


Add the flour, salt, cinnamon, clove, nutmeg, and baking powder to a bowl and mix.


To another bowl, add the apple sauce, aquafaba, almond milk, vanilla, melted vegan butter, and maple syrup. Mix thoroughly.


Add the wet ingredients to the dry ingredients, mix to make a lump free mixture.

To make pancakes, heat a pan or skillet on medium heat. Add quarter teaspoon butter and scoop the pancake batter to the hot pan. Let it cook for 2 minutes. When bubbles start appearing, flip the pancakes and cook for another one to one and a half minute. Repeat with the remaining pancake batter.


To serve: Stack three pancakes on a plate, add a dollop of vegan butter on top, add the chunky apple pie maple syrup on top, serve immediately.
