Mixed Berry Crisp


This is the ultimate berrilicious dessert made with season's freshest berries and with a delicious almond and oat streusel on top. Unlike any other crisp, this one doesn't have any all purpose flour. This crisp is a heavenly dessert with whipped cream or ice cream.


Summer means lots and lots of fresh berries. They are great to snack on as such or use in salads like this one with poppy seed dressing or in delicious lassi. Though they can be made into cakes, they are best in crisps. I love a good Strawberry Pie or very berry pie. Personally, crisps rank a little higher than pies. They are easy to make and I love the crunchy toppings. That is totally agreeable. Easy dessert is always a winner! 

I made with a mixture of berries. I prefer to keep more strawberries and blueberries. Raspberries have a lot of seeds and many may not prefer them. So the proportion of raspberries and blackberries are a little low when compared to strawberry and blueberry. This can be made with a single type of berry too. 

Also, the berries were so sweet, and that I made sweeter oats topping, I have not added sugar in the berry mixture. Depending on the berries you use, add one or two teaspoons of sugar to the berry mixture. The addition of cornstarch is important as it is the thickener. 

Berries have a lot of water and the water released while cooking as berry juice needs to be thickened to have the perfect dessert. If you do not have cornstarch, flour can also be used.



This recipe doesn't use any all purpose flour. Many of the fruit crisps use all purpose flour and to make it more healthier, I have used oat flour and almond flour instead of regular flour. Oats and almonds give more nutrition and more fiber. This berry crisp with oats and nuts is SO tasty that I would love to eat for breakfast too! Crisps are my favorite dessert and I would love it in any form, whether it is Fresh Cherry and Nectarine Crisp, or peach, or apple crisp. Warm crisp with ice cream is a super hit dessert hitting the right spots!

Ingredients

For the Fruit Layer

Strawberry - 1 cup, sliced
Blueberry - 1 cup
Raspberry- 1/4 cup
Black berry - 1/4 cup
Vanilla - 1/2 tsp
Corn flour - 1.5 tbsp
Lemon Juice - 1/2 tsp

For the Streusel

Rolled oats - 3/4 cup
Oat flour  1/4 cup
Almond flour - 1/4 cup
Almonds - 1/4 cup, sliced
Brown sugar - 1/2 cup
Butter - 2 .5 tbsp, cold, cubed
Salt - 1/8 tsp

Whipped cream or Ice cream to serve.

Method

Preheat the oven to 350 degrees F.

Add the rolled oats, oat flour, almond flour, brown sugar, salt, and two tablespoons cold butter to a bowl. Use a pastry cutter and mix the butter into the flour mixture to form a crumbly mixture.


Add the sliced almonds and mix.


Add the berries, vanilla, lemon juice, and corn starch to a bowl. mix.


Transfer to a oven safe 5.5X5.5-in or 6x6-in dish.


Add the oats crumble on top. Add the remaining butter on top. Bake for 27-28 minutes, or until the mixture is bubbly and golden on top.


Remove from the oven, cool.


Serve with whipped cream or ice cream.
