Soft White Chocolate Strawberry Fudge


This is an easy recipe to make only with five ingredients! Yes, five! This recipe uses vegan marshamllows and freeze dried strawberries along with condensed milk, butter, and white chocolate.This is an amazing fudge perfect to have for Valentine's Day! This soft fudge will melt your heart! This is good for any day too. 


This fudge is colored with natural strawberries. So it will have a little blush color than pinkish color. If needed add a few drops of pink food color. The fudge will stay fresh for about a week to 10 days when stored in a cool, dry place. So, this fudge is an ideal candidate to make ahead when your are busy.


These soft fudge can be shaped after it sets a little. After transfering to the tray, let it rest for 30 minutes. Slice into squares or shape them with any mold. Then, let them firm up, the fudge will set into soft bite texture, melting in your mouth.

Ingredients
Makes 16 pieces

Prep time: 5 minutes
Cook time: 7-9 minutes
Setting time - 3 to 5 hours

White chocolate - 12-oz (340g), roughly chopped
Sweetened condensed milk - 1/2 of 14-oz can
Strawberry, freeze dried - 5 tbsp, powdered
Butter - 4 tbsp
Dandies (vegan marshmallow) - 1 cup, small marshmallow

Method

Powder the freeze dried strawberries.


Heat a heavy bottomed pan or a Dutch oven. Add the white chocolate, butter, and condensed milk. Stir and cook until the chocolate melts smoothly. This may take a couple of minutes. Add the starwberry powder.


Add the marshmallows and stir continuously. Cook for a couple more minutes. The whole mixture will swirl around. Remove from flame.


Transfer to a 9X9-in pan. Smooth with a parchment. Cool for 30 minutes.



Cut into squares. This can be shaped into any shape at this point and will be very soft. This will firm up a little within a few hours.


Store in an airtight container.

Choco Peanut Butter Oat-Millet Muffins


Do you want the best, healthy muffin for breakfast? Then, this is the perfect one for you. Made with whole grains (oats, millets, and whole wheat) and nuts, this is the addictive muffin that can boost you with nutrition and energy! 


This muffin is made with rolled oats, foxtail millet flour, and whole wheat flour. I have tried this barnyard millet flour and foxtail millet flour, and the results were similar. Tasty, and delicious muffin! Basically any millet flour should work for this recipe. Do not skip the whole wheat flour. Millet flour is not glutinous and the baked muffin will be very crumbly if a little wheat flour is not added. Wheat can be replaced with all-purpose flour too. But adding wheat makes it even healthier! I love using millet flour in muffins, and this Pearl Millet Banana Muffins and this Papaya Orange Muffins with barnyard millet flour are addictive!

The muffins stay good for a couple of days if the weather is cool, stays great for a week in refrigeartor. Warm the muffins and serve.


Coconut sugar or brown sugar can be used. I have tried this with maple syrup too, but the ratio varies a little, but it's worth trying. The muffin can be drizzled with maple syrup and that tasted divine! My way of having this muffin.

We are cooking with millets this week in our Foodie Monday Blog Hop group. When I checked my pantry, I had only barnyard and foxtail millet flours and not the grains. Narmadha was kind to accept baking and this muffin was the ideal choice for both the events. Millets are amazing and love to include them in many ways in our diet. Pearl Millet Okara Tikki is a delicious snack/appetizer, and this Sorghum Salad is my favorite way of having a healthy summer lunch. I'll be happy with a piping hot bowl of this Easy One-Pot Mixed Millet and Dal Khichdi and Zero Oil Veggie & Millet Noodle Soup, for this cold season.

Ingredients
Makes 12 regular muffins

Rolled oats - 3/4 cup
Millet flour - 3/4 cup
Whole wheat flour - 1/2 cup
Oil - 1/4 cup
Peanut butter - 1/2 cup
Almond milk - 1and 1/4 cup
Chocolate chips - 1/2 cup
Brown sugar/coconut sugar - 1 cup
Baking soda - 1/2 tsp
Baking powder - 1 tsp
Flaxseed powder - 3 tbsp

Method

Add the rolled oats, flaxseed powder, and almond milk to a bowl. Mix and set aside for it to soak for 15-20 minutes.


Preheat the oven to 350 degrees F.
To a bowl add the whole wheat flour, millet flour, baking powder, baking soda, and mix.


Add the oil, coconut/brown sugar, peanut butter, vanilla to a bowl and whisk.


Once the oat mixture has soaked, it will be like this.


Add the dry ingredients, followed by wet ingredients, and mix quickly.


Fold in the chocolate chips.


Scoop into a lined muffin tray.


Bake for 23 -24 minutes. 


Cool for 10 minutes. Serve warm.

Aloo Sandwich/Potato Sandwich


This is the most comforting sandwich with a tasty potato filling! This is very easy to prepare and very tasty. This can be served for any meal. The filling is vegan, but butter is used to toast the sandwich in this recipe. For a vegan sandwich, use plant based butter or oil.


The potato filling is always magical and you can serve oohs and aahhhs when this is set on the table. You'll get a big hug from your kids when you serve this. Yes, everyone loves this sandwich. In fact, I double this recipe always. Keep the filling in fridge, and is great to fix a meal when you have a crazy schedule. This is comfort food and no one would ever complain for serving this again. You’ll be having requests to serve this again and again. 


This can be great to pack as lunch. When the filling is ready in fridge, this helps in makeing these  hot for dinner, when you have time crunch to cook after a long day. This is great for a weekend brunch too and helps you enjoy a lazy weekend . In small portion, this can a good sack for kids returning home hungry after school or hungry. This is amazing with tomato soup too!


I have used flavored butter, spicy mint butter, in this recipe. Plain butter or vegan butter also works great. The mint in the butter added tons of flavor to the sandwich. I have used Oat Nut Bread, but any bread will work grea for this sandwich. The filling quantity can be adjusted, that is, depending on how much you want to fill, 5-6 sandwiches can be made. 


Serve this as such of with ketchup, this is going to be loved. My kids love to dunk in ketchup. I love with with green mint-cilantro chutney! This can be served with ranch dip too and would be lip-smacking delicious! YUM!



We love sandwiches and grilled cheese! Kids go crazy with one if with the Italian Style Ricotta Spinach Grilled Cheese! Spinach snd Red Pepper grilled cheese is amazing to serve as such of with soup.

Bread is amazing and satisfying, isn’t it? This sandwich is our handy one that helps with a quick meal often and sharing this loved recipe for this theme. Ingredients
Makes 5-6 sandwiches

Bread slices - 10-12
Oil/ Butter - 1/2 cup or less


For the Filling

Aloo - 400g,cooked and mashed makes 1 and 3/4 cups
Salt -3/4 tsp
Peas - 1/4 cup, fresh or frozen
Onion - 1/2 cup, chopped
Cumin - 1/2 tsp
Oil - 1 -1.5 tbsp
Turmeric - 1/4 tsp
Cayenne - 1/2 tsp
Garam masala - 1/4 tsp
Cilantro - 1 tbsp


Method

Cook and mash the potatoes. Set aside.


In a pan, heat oil. Add cumin followed by asafetida, and fry for 30 seconds. Add the onions and ginger, and sauté for 4-5 minutes, until the onions turn translucent.


Add the peas and cook for 1-2 minutes.


Add the mashed potatoes, salt, turmeric, garam masala, and cayenne, mix thoroughly. Cook for 2-3 minutes. Switch off the flame. Add cilantro  and mix.


To make sandwiches: Apply butter on one side of a slice of bread. Heat a pan on low medium heat. Place the buttered side facing down on the pan. Spread about two tablespoons of potato filling on another slice. Place it on the bread on the pan. Spread butter on top. Cook both sides until desired crispness. Alternatively, spread butter on each slice, spread the filling and close with buttered side, and toast on a pan till desired crispness. 


Serve with ketchup, or any sauce.




Vegan Baked Masala Veggie Tots


These vegan, baked tots are the most delicious and healthy ones. With less oil and lots of veggies, this will be loved by kids too, even though they may not be a great fan of veggies. Loaded with veggies and nuts, this is a guily-free snack! This can be a great appetizer for any occasion, or party, or for game day!


These are made with carrots, broccoli, potatoes, sweet potatoes/yam, and zucchini! Lots of veggies. Almond flour is also used along with flax seed powder, these increase the nutritional value while making it easier to hold and shape these tots.


It is important to squeeze out the water from the veggies. If skipped, it will be impossible to shape them, and they may not bake well. Sprinkle the salt and let the veggie mixture sit on the colander. Water will get collected and then squeeze out maximum to have the veggies with low moisture.


Ketchup is a perfect one to dip and devour these tots, but any creamy dips like this vegan Cashew, Cilantro, and Coconut Sauce will also be great with these tots. The spices added in these tots will give a unique flavor to these tots. If you do not have these, spices, salt and pepper can also be used to make. Garam masala or curry powder can be used. If you love a spicy version, add finely minced Thai chiles to the veggie mixture. I love that version though my kids are not in favor of a very spicy version.

Baked Tater Tots is yet another delicious snack that will be crowd pleaser. This Gluten-Free, Low Carb Cauliflower Bites is my favorite version. Tortilla Taco Cups and Taco Stuufed Sweet Peppers are also great snacks that your family will love!



Ingredients
Makes 30

Prep time: 10 min
Resting time: 20-30 min
Shaping: 10 min
Baking time: 30 min


Zuchini - 1 cup, thick shreds
Carrots - 1 cup, thick shreds
Potatoes  -1 cup, thick shreds
Sweet potatoes/yam - 1 cup, thick shreds
Broccoli - 1 cup, shredded
Onion - 1/3 cup, finely chopped
Garlic - 1 tsp, finely chopped
Salt - 1 tsp
Nitritional yeast - 1/2 tbsp
Flaxseed powder - 1 tbsp
Almond flour - 3 tbsp
Oil - 2 tbsp
Cayenne - 3/4 tsp
Garam masala -1/2 tsp
Turemeric - 1/4 tsp

Method

Add the shredded veggies to a bowl and add half teaspoon salt. Mix.


Put it in collander and let the water leach out of the veggies. Squeeze and remove as much as possible after 20-30 minutes. Discard the water and transfer the veggies to a bowl.


Add the onions, garlic, almond flour, flaxseed powder, turmeric, cayenne, garam masala, nutritional yeast, remaining salt, and cilantro to the veggie mix. Combine thoroughly.


Preheat the oven to 400 degrees F.
Take about a tablespoon and shape into tots. They can be shaped in any form as per preference.


Brush the tots with oil. Bake for 30 minutes at 400 degrees F, flipping once after 15 minutes.


Remove from the oven, cool for a few minutes. Serve warm with ketchup or any dip.
