This is a simple, easy to make, comforting rice from Greece. In simple terms this is Greek spinach rice. Thus rice is vegan. This can be served with vegan feta and yogurt or regular versions of feta and yogurt.

Ingredients
Serves 4
Rice - 1 cup
Spinach - 6 cups, packed, roughly chopped
Onion - 1/2 cup, sliced
Garlic - 1 tbsp, finely chopped
Salt - 1 tsp
Water - 2 cups
Black pepper powder- 3/4 tsp
Dill leaves - 3-4 tbsp, chopped
Lemon juice - 2 tbsp
Method
When more than 90% of the liquid is absorbed by the rice, lower the flame, cover and cook for 12-15 minutes.
Add the lemon juice, fluff and serve.

DeleteWhat a great comfort food dish. It would make a great weeknight dish. I can see that with the addition of a bit of feta cheese and yogurt you could eat it as a meal by itself. My kind of dinner!
