Hummus Waffle




This is a simple, easy, quick, and nutritious waffle. Hummus, Greek yogurt along with whole wheat flour make a healthy option. This can be whipped up in a few minutes with any flavor of hummus you have on hand. This is perfect for a healthy and satisfying weeknight dinner or for breakfast or relaxed brunch. Serve this with tzatziki or whipped feta dip. To make a scrumptious meal serve with a salad. Greek salad pairs perfectly with this. This is an eggless recipe. Hummus and aquafaba perfectly balance the texture of the waffle/pancake.


This waffle is easy to make. Just mix everything and pour on your waffle maker and cook them according to the crispness you prefer. I usually keep it in setting three. Perfect crisp on the outside, soft inside. To make it vegan, replace the Greek yogurt with plant based yogurt or unsweetened milk. Any herbs of choice can be used. 


Garbanzos are rich in protein and hummus always finds a place in our menu. I use hummus not just for dipping (actually scooping) but in many fusion recipes. Instead of making dosa with it many times it ends up as pancakes or waffles as per kids request. These savory waffles are very delicious and can be made with any flavored hummus. I have used curried hummus in this recipe. It just opens up an entire set of ideas to make many different flavored waffles/pancakes that are quick to make and nutritious.

Waffles are loved by everyone irrespective of age. The name has some magic and gives some comfort that the meal in going to be a happy no-fuss one. I try many eggless waffles and these are great for vegan guests as well as people with allergies. Coconut pancakes/ Waffles is eggless too and for a savory version try the Handvo waffle, which is based on Gujarati Handvo, a popular gluten-free snack or light meal.

Ingredients
Makes 4-5 waffles

Whole wheat flour - 1 cup
Hummus - 1/2 cup
Greek yogurt - 1/2 cup
Water - 1 cup
Baking powder - 1 tsp
Salt - 2/3 tsp
Cayenne - 1/2 tsp
Parsley/cilantro - 2 tbsp, chopped
Oil - 2 tbsp
Aquafaba - 2 tbsp
Sesame seeds - 1 tbsp, toasted


Method

Add all the ingredients and whisk to a smooth batter.


Preheat the waffle iron or waffle maker. Once it is ready pour the batter and cook the waffle as per the settings in your waffle maker and your preferences.



Serve with tzatziki, salad.
