Kumquat Lemon Iced Tea

Kumquat lemon iced tea is one of the classic iced teas from Taiwan. It is one of the best and refreshing summer drink with a mild flavor of jasmine tea and refreshing lemons with a hint of kumquat.

One of the tea joint, T4, has this drink and I love it. The recipe here is equivalent to 70% sugar. This sweetness is perfect for me. If you would love to have a 100% sugar one, add a tsp of sugar (if you want to keep it vegan), or add a dash of honey.  Adding boba, crystal boba or jelly is optional. I have added my vegan coconut jelly. Feel free to add as per your preferences. 

Lemon is one of the best fruit that is always refreshing. Fresh lemonades and iced teas are the best drinks to beat the heat. Pea Flower Lemonade is also a refreshing and healthy drink with added pea flower extract and the change in the color of the lemonade is fascinating for young kids as well as adults. Iced teas with lemon are energizing and refreshing and this tea is a perfect fit.

Serves 2

Lemon - 1/2
Kumquat - 3 to 4
Mint - 2 leaves
Sugar -4 to5 tsp
Water - 2 cups
Ice - 3/4 cup to 1 cup
Jasmine tea bags - 2 
Coconut jelly - 3-5 tbsp, optional


Boil water and add the tea bag. Let it steep for a minute. Discard the bag and mix sugar.

Slice the kumquat, and chop the lemon. Crush a little with mint leaves.

Add 1/4 ice to a shaker. To this add the tea and crushed lemon kumquat mix. Cover and shake. Filter to remove the fruits.

Add 1/4 cup to 1/2 ice in each cup followed by coconut jelly (or boba). Add the tea and serve.
