Vegan Curried Cabbage Soup #SoupSaturdaySwappers




Soup is always comforting. In winter, especially. Making soups and stews as part of the meal helps in being healthy. It also helps with weight management. Cabbage is one such vegetable that helps in weight management. Sue of Palatable Pastime announced that we would do cabbage soups for Soup Saturday Swappers event and I decided right away to make this vegan soup. There a few different styles of cabbage soups that I make. This is one of my favorite soups which can be a curry too. This soup can be made with the staple ingredients in a pantry. It doesn't require a lot of prep work too. I have used purple cabbage as it imparts a beautiful color to the soup. I have tried this with regular cabbage as well and it is equally delicious. I have served topped with rice noodles to make a complete meal. It is great with a slice of bread too.





Ingredients

Serves 2-4

Cabbage - 2 cups, sliced and chopped 1 in length        
Salt - 1 and 1.4 tsp
Black pepper powder - 1/6 tsp
Serrano - 1 halved and slit
Carrots - 1/2 cup, diced
Peas - 1/4 cup
Water - 3 cups
Coconut milk - 1/2 cup
Lemon juice - 1 tsp
Oil - 1 tsp
Ginger - 1 tsp, finely chopped
Garlic - 1 tsp, finely chopped
Green onions - 2 tbsp
Cilantro - 2 tbsp

Cooked rice noodles - 1 cup, optional

Method

Heat oil in a saucepot. Add the slit serrano, ginger, and garlic. Sauté for 2 minutes. Add the veggies and sauté for 2-3 minutes. Add the water, salt, and pepper. Bring to a boil and simmer for 5 -7minutes till the veggies are tender.



Lower the flame, add the coconut milk. When it begins to boil, switch off the flame. Stir in the lemon juice.


Ladle into bowls. This can be served with rice noodles too. Prepare one block of rice noodles according to the package directions and add on top of the soup. Garnish with cilantro and green onions, Serve immediately.
