Single Serve Eggless Chocolate Lava Cake



Lava cakes are addictive. If you have a question what is lava cake, then...These are rich and decadent desserts with gooey chocolate inside. My recipe is eggless and moreover, it is for one serving. Whenever you crave or your kid wants, instead of making a big batch, it is better to make a single serving. Holidays are here. Pandemic has affected our celebrations all throughout the year. Because of the stay at home rules, we may not have big gatherings. Therefore baking in smaller batches or single servings is easier. Every day kids (s) can have fun varieties of desserts and the holidays can be made more memorable. These lava cakes make memories extra special. Decadent gooey chocolate cake.....is there any need for any other thing to make a kid happy. They are delicious and easy to make. Even a kid can make it. Let me know if you agree.

 Ingredients

All-purpose flour - 2 tbsp
Cocoa - 1 tsp
Sugar - 3 tsp
Baking powder - 1/8 tsp
Baking soda - a pinch
Salt - a pinch
Vanilla - 1/8 tsp
Ghee or melted butter - 1 tbsp
Milk - 3 tbsp
Chocolate - 1 or 2 pieces or chunks

Method

Butter a ramekin or any small baking dish and dust with flour. Preheat the oven to 350 degrees F. Add the dry ingredients to a small bowl, mix, and set aside. Add the milk, ghee, vanilla, sugar, and mix. Add it to the dry ingredients, mix well. Pour it into the ramekin, drop a chunk or two of chocolate. 


Bake for 15 min. Remove from the oven, cool for 5 min. Slowly run a knife on the edge of the ramekin, to loosen the cake. Transfer the cake to a plate. 

Optionally, dust with confectioners sugar. Slice, and enjoy the chocolate lava cake.

Serve with a scoop of vanilla ice cream for making it extra special.
Tips
Use good quality baking chocolate. They will melt well.
The baking time may change according to your ramekin size. Just keep an eye, and check near the edges for doneness.
